Many of you have asked for the recipe for the Banana Bread I made and posted about recently on IG, so here you go! I have tried many a different recipe for this bread, and this is by far the best I’ve found. I have tweaked it to my liking and it always turns out so beautifully. Enjoy!
Melissa’s Golden Banana Bread:
- 1/2 c. unsalted butter, softened
- 1 c. granulated sugar
- 2 large eggs
- 1 1/2 c. unbleached all purpose flour
- 1 t. baking soda
- 1 t. salt
- 3 very ripe bananas, mashed
- 1/2 c. plain Greek yogurt
- 1 T. vanilla extract
- ground nutmeg (optional, but I love it)
- ground cinnamon (optional)
Preheat oven to 350 degrees. Grease a standard sized loaf pan and set aside.
In a large mixing bowl, cream butter and sugar. Add eggs and beat to incorporate. (I prefer using an electric hand mixer to a stand mixer.)
In another bowl, whisk together the flour, salt and baking soda, and spices if using. Add flour mixture to the creamed butter mixture and beat until just combined.
Add the bananas, Greek yogurt, and vanilla extract. Mix until blended. Pour the batter into the prepared pan.
Bake for approximately one hour and ten minutes, adjusting as needed according to how hot your oven runs. Bake until golden brown and a toothpick comes out clean. Let the bread rest in the pan for at least ten minutes. Optionally, turn out to cool, or leave in pan.
